After years in the bustle of great kitchen brigades, creating JLM Signature felt like a natural step. A fierce desire to rethink the fine-dining experience, to break the codes and bring the excellence of haute cuisine as close as possible to the guests. The ambition is no longer to bring the guest to the restaurant, but to turn the place of the reception into a true fine-dining table, for one evening.

We take over the kitchen to create something exceptional, with absolute discretion. After service, the kitchen is returned in impeccable condition, as if no one had been there. Your only concern: savouring the moment with your guests.

Treat yourself to the prestige of a Chef’s meal in complete autonomy, thanks to JLM Signature’s exclusive concept. The Chef handles all the technical work in advance (cooking, jus and reductions) to the same standards as for private occasions. Each component is then preserved in bespoke packaging, following a protocol unique to the House.
On the day, you orchestrate the plating. The Chef’s Notebook guides you step by step as the flavours come alive. A stroke of sauce, a fresh herb set in place, zest grated at the last minute… You sign the plate before serving it.
The stress of cooking disappears. The pride and the compliments remain.
Pairing
For each menu, JLM Signature composes food and wine pairings that are entirely bespoke. Guided by your wishes and your budget, we carefully select the bottles that will accompany each of your dishes, from starter to dessert.
