A chef for more than 20 years, Jean-Louis Maffei combines the precision of fine dining with mastery of the event.
Trained at the Institut des Métiers et des Techniques in Grenoble, he forged the rigour and high standards that would define his culinary identity. He graduated top of his class, and his absolute dedication to the craft took him to first place in the Rhône-Alpes region, and finally to the national finals of the prestigious Meilleur Apprenti de France competition.
His path of excellence runs between France and Switzerland. From Michelin-starred tables to the prestige of Relais & Châteaux, by way of major Swiss institutions such as the Société Nautique de Genève, he masters the codes of haute gastronomie. Experienced in leading large brigades, he orchestrates services of every scale with the same goldsmith’s precision, guaranteeing absolute refinement whatever the number of guests.
The rigour of time, respect for what is true.
“My heritage is French cuisine. But the search for balance and the right taste knows no borders. I gladly borrow from the world’s cultures that precise nuance which will perfect a plate.
At the heart of my approach lies one absolute value: respect for the produce. Selecting only fresh ingredients, following the rhythm of the seasons and favouring our local producers is not merely a culinary standard. It is a duty to the raw material, and a tribute to the work of every artisan who laboured before me.
The rigour and refinement I bring to every plate have one single purpose: to elevate what nature has entrusted to us. Technique is everywhere, precise to the millimetre, but it always steps aside to let the taste speak for itself.”
“Beyond the work accomplished, my one true aim is to give you a unique emotion from the very first bite.”
