Article 1 – The JLM Signature Experience
These General Terms and Conditions exclusively govern the Private Chef and Event Catering services offered by JLM Signature Maffei. By accepting our commercial proposal, the client secures an exceptional bespoke service and accepts these terms without reservation. As every event is unique, our House studies every type of request in order to provide a personalised response, in strict compliance with our standards of presentation and excellence.
Article 2 – Pricing, Chef Booking and Brigade
- Scope of service: The Private Chef service applies to receptions of 2 to 15 covers. From 16 covers, the service falls under Event Catering.
- Private Chef – Chef Booking fee: To guarantee production time in our kitchen, precision of sourcing and exclusivity of the date, every Private Chef service is subject to a Chef Booking fee of CHF 600, covering travel within Geneva city limits (City of Geneva and neighbouring municipalities), production in our kitchen and exclusive service at the reception venue, to which the price of the menus is added.
- Event Catering – Culinary Direction & Event Logistics fee: Every Event Catering service is the subject of a bespoke logistics study, included in the quote, and of a Culinary Direction & Event Logistics fee, set by quotation from CHF 650, covering production in our kitchen, transport and orchestration of the event by the Chef.
- Additional services: Fees for additional staff (dining room and kitchen), drinks and any hire of external equipment are extra and are priced separately by quotation.
- Pricing: Prices are expressed in Swiss francs (CHF). JLM Signature Maffei is not subject to VAT. Our plated menus start at CHF 160 per guest. The client is free to provide their own drinks without any corkage fee being applied.
- Drinks: Food and wine pairing advice is included in the service. Wines and bottles supplied by JLM Signature Maffei accompany a service exclusively and are invoiced separately, as per the quote. JLM Signature Maffei does not engage in retail wine sales.
- Travel costs: For both formats, travel beyond Geneva city limits is invoiced on a bespoke basis, set by quotation according to the location of the event, the estimated travel time, the volume of equipment to be transported and, where applicable, the hire of a suitable or refrigerated vehicle.
- Brigade sizing: The presence of supervisory and support staff is a strict condition for guaranteeing the standard of quality of JLM Signature. Unless otherwise agreed, the brigade is sized as follows: a Maître d’hôtel is required from 5 covers, a Sous-chef from 9 covers, and an additional Chef de rang from 12 covers. JLM Signature reserves the exclusive and unilateral right to modify this sizing (adding dining-room or kitchen staff) if the specifics of the menu (number of courses), the layout of the reception venue (distance from the kitchen, floors) or the nature of the event so require. These adjustments will be validated when the final quote is issued.
- Fees for additional staff: invoiced as shifts, on a minimum basis of 4 hours per person: Chef de rang from CHF 260 (CHF 65/h); Sous-chef from CHF 300 (CHF 75/h); Maître d’hôtel or expert Sommelier from CHF 340 (CHF 85/h). The invoiced time covers the entire time on site (set-up, actual duration of the meal, tidying and restoring after service). Any hour begun is invoiced in full.
- Tableware and Logistics:
- Client’s tableware: Service is provided by default with the client’s tableware.
- Collection Signature: On request, for up to 15 covers for the Private Chef and up to 20 covers for Event Catering, JLM Signature Maffei offers for hire its own selection of fine-dining plates and exceptional cutlery, as an option, at a per-guest rate (CHF 25 for 3 to 4-course menus, CHF 35 for 5 to 7-course menus).
- Outsourced logistics: For larger volumes or specific needs (furniture, glassware, mobile cooking equipment), hire from our partners is re-invoiced at cost, plus 15% for technical coordination.
- Breakage and damage: Any breakage or damage, whether it concerns the Collection Signature or externally hired equipment, is re-invoiced in full to the client at its new replacement value.
Article 3 – Booking, Payment and Late-payment Penalties
- Confirmation and Deposit: Exclusive booking of the date and sourcing require payment of a 50% deposit. To definitively confirm that the event will take place, these funds must be credited to the account of JLM Signature Maffei upon signature of the quote.
- Balance and Adjustments (D-7): The final number of guests and dietary restrictions must be confirmed no later than seven days (D-7) before the event. Payment of the remaining 50% is due on the same date. The service goes ahead strictly on condition that the funds have actually been received.
- Late booking: Any service confirmed 7 days or less before the event requires immediate payment in full (100%) of the quote.
- Payment methods: Each invoice is issued with a Swiss QR-bill. Payment is made by bank transfer or instant transfer using this QR-bill, by TWINT, or in cash against a receipt. A PDF transfer notice does not constitute receipt of funds.
- Late payment: In accordance with Article 104 of the Swiss Code of Obligations, any closing invoice unpaid within 10 net days of issue will automatically bear default interest of 5% per year, plus administrative handling fees set at a flat CHF 40 per reminder issued, without prejudice to legal recovery costs.
Article 4 – Performance of the Service and Adjustments
- Menu adaptation: The menu validated in the quote is prepared from fresh, seasonal produce, often from small producers. If a product becomes unavailable for a reason beyond the control of JLM Signature Maffei (weather, harvest, fishing, supply) or if its quality is judged insufficient by the Chef in light of their standards, the Chef reserves the right to replace it with a product of equivalent or superior quality, without change to the agreed price. The client is informed as soon as possible. Any substitution respects the allergies and dietary restrictions communicated.
- Night surcharge: To cover the night-work supplement owed to staff under the Swiss Labour Act (Art. 17b), any hour of service begun after 11:00 pm is subject to a 25% surcharge on the hourly rate of the brigade present.
- Additional drinks: Only the Client who signed the quote, or the representative named in it, may authorise the opening of bottles beyond the allowance included in the package. The quote may provide for a reserve of additional bottles authorised in advance. On the day of the event, before drawing on this reserve, our maître d’hôtel obtains the representative’s express agreement on the number of bottles to open, confirmed in writing (including by message); the same applies to any bottle beyond the reserve, within the limit of bottles available. Only bottles actually opened are invoiced, at the price stated in the quote. The count made by our maître d’hôtel from the inventory of our service cellar is authoritative; it is sent to the representative on the same day and entered on the closing invoice.
- Closing invoice: A final invoice, payable within 10 net days, will be issued solely to settle any overtime, guests added on the day (strictly subject to the Chef’s approval), additional bottles opened, emergency logistics fees or equipment breakage.
Article 5 – Compliance of Premises, Logistics and Food Safety
- Infrastructure and Technical responsibility: The client provides easy access for unloading, a production area with running water, a 16A power supply, a working oven, toilets and adequately sized cold storage. The client guarantees that their equipment is in perfect working order. JLM Signature Maffei declines all liability for delays or impairment of the service linked to a technical failure of the client’s installations.
- Right of withdrawal: If the production area is judged unsanitary or seriously non-compliant, compromising food safety, the Chef exercises an absolute right of withdrawal on site. As this situation is attributable to the client (Art. 97 CO), 50% of the quote remains due to the Provider. A CHF 150 “Preparation fee” will be applied if the kitchen requires prior clearing by us.
- Cleaning products: Use of our own professional cleaning kit generates a CHF 50 “Consumables fee”.
- Scope of restoration: The cleaning included covers the preparation area, the equipment of JLM Signature Maffei and starting the dishwasher. Cleaning floors and reception areas, emptying the dishwasher and clearing furniture are not included; they may be offered as extras by quotation. For large venues or significant needs, a cleaning company may be engaged by quotation.
- Waste removal: Glass disposal remains the client’s responsibility. Production waste is handled by the brigade, provided there is direct and easy access to the site’s containers (the client must supply keys/badges/codes in advance). If access is impossible, unanticipated, or if the client requires us to remove waste off-site, a CHF 250 “Emergency removal logistics fee” will be invoiced.
- Food-safety disclaimer (Keeping leftovers): If the client requires keeping any leftover food at the end of the event, the transfer of food-safety responsibility takes place instantly upon the brigade’s departure. JLM Signature Maffei declines all liability for any later health problem linked to poor storage or reheating.
Article 6 – Cancellation Conditions
In accordance with Article 160 of the Swiss Code of Obligations (penalty clause), and given the exceptional quality of the produce and the commitment of the brigades, the following indemnities are due automatically:
- Cancellation at D-15 or earlier: Sums paid are refunded in full.
- Cancellation at D-14 or later, up to the day of the event: A cancellation indemnity equal to 50% of the total amount of the quote is due. It is calculated on the total amount of the quote, not on the deposit alone; sums paid beyond this indemnity are refunded.
Article 7 – Force Majeure, Bad Weather and Limited Liability
- Force majeure (Art. 119 CO): JLM Signature Maffei is released from its obligations, and no indemnity may be claimed from it, in the event of circumstances making the service impossible (serious accident during transport, natural disaster, pandemic).
- Bad weather: For outdoor events, the client must provide a covered and workable fallback plan. In the event of major bad weather requiring cancellation on the day, or if the fallback venue is unusable, the 50% cancellation indemnity of the total amount of the quote provided for in Article 6 applies.
- Limitation of liability (Art. 100 CO): The Provider’s civil liability for any damage caused to the client’s movable or immovable property during the service is strictly limited to cases of gross negligence or wilful misconduct.
Article 8 – Safety and Respect for Staff (Right of withdrawal)
- Client’s obligations: For any service or delivery, the client guarantees a safe and sanitary place, whose installations (electricity, gas, appliances, access) present no danger and are compatible with food preparation, as well as respectful behaviour on their part, on the part of their guests and of anyone present, for whom they answer (Art. 111 CO).
- Protection of staff: JLM Signature Maffei has a legal obligation to protect the personality, health and integrity of its staff, and in particular to ensure they are not sexually harassed (Art. 328 CO). The client acknowledges that this obligation takes precedence over performance of the service.
- Cases of withdrawal: JLM Signature Maffei may suspend or interrupt the service and leave the premises with its staff and equipment, in particular in the event of:
- danger to the health or safety of staff (dangerous installation, unsanitary premises, hygiene incompatible with the service);
- violence, threats, insults, discriminatory remarks, psychological or sexual harassment, non-consensual physical contact or inappropriate behaviour towards the Chef or staff, by the client, a guest or anyone present;
- aggressive behaviour linked to alcohol or other substances;
- a demand contrary to the law, to hygiene rules or to food safety.
- Procedure: Unless there is immediate danger, the Chef or the person in charge first reports the situation to the client and asks them to remedy it without delay; failing this, they may withdraw. In the event of immediate danger, violence or sexual harassment, withdrawal may be immediate and without warning. The decision is taken in good faith by the Chef or the person in charge; the facts are recorded in writing on the same day.
- Financial consequences: As the interruption is attributable to the client, they are in default and answer for non-performance (Art. 91, 95 and 97 CO). The total agreed price remains due (food, preparation, staff, travel and options), less only the costs that JLM Signature Maffei has actually saved as a result of the interruption. Deposits paid are credited against this amount and the balance is payable within 10 days. Additional costs caused by the incident are borne by the client.
- Liability: JLM Signature Maffei accepts no liability towards the client or their guests for the consequences of the interruption, subject to its own gross negligence or wilful misconduct (Art. 100 CO).
- Other rights reserved: Compensation for any damage suffered by JLM Signature Maffei or its staff, any criminal complaint and the refusal of any future order remain reserved.
Article 9 – Intellectual Property, Image Rights and nFADP
- Intellectual property: Menus, recipes, technical sheets and plating concepts remain the exclusive property of JLM Signature Maffei.
- Image rights: The Provider reserves the right to photograph or film its own culinary creations and scenography (strictly excluding the faces and identity of guests) for promotional purposes, unless the client expressly refuses in writing.
- Data protection: In accordance with the nFADP, personal data is strictly confidential and held securely: enquiries, contact details and commercial correspondence for a maximum of three years after the last contact; invoices and accounting records for ten years, in accordance with legal obligations.
Article 10 – Governing Law and Jurisdiction
These terms are governed exclusively by Swiss substantive law. In the event of a dispute, the exclusive place of jurisdiction is the canton of Geneva, where the company has its registered office.

Article 1 – The L’Écrin Signature Concept
These General Terms and Conditions exclusively govern the sale of the “L’Écrin Signature” offer by JLM Signature Maffei. This exclusive service consists of the making of gourmet menus packaged according to a preservation protocol specific to the House, hand-delivered by the Chef, and finished and plated by the client in complete autonomy, following the Chef’s Notebook supplied with the order. Validating an order implies unreserved acceptance of these terms.
Article 2 – Pricing, Sourcing and Delivery
- Order threshold: To guarantee bespoke sourcing and dedicated production, a flat minimum order of CHF 350 (excluding any delivery and urgent-order fees) is required.
- Pricing: All our prices are expressed in Swiss francs (CHF). JLM Signature Maffei is not subject to VAT.
- Delivery logistics: To guarantee the absolute integrity of the cold chain, JLM Signature Maffei allows no collection at its kitchen. Goods are delivered exclusively by hand by us. Delivery is subject to a CHF 40 flat fee within Geneva city limits (City of Geneva and neighbouring municipalities). Beyond, it is subject to bespoke logistics pricing set by quotation (calculated according to location, estimated travel time and distance).
- Express Sourcing (Urgent): Any order confirmed at short notice (less than 5 days before the delivery date) will be subject to an additional charge called “Express Sourcing”. This charge covers emergency logistical reorganisation and is entirely separate from delivery costs.
Article 3 – Ordering, Payment and Late Payment
- Confirmation and Payment in full: As production is carried out specifically to order to guarantee absolute freshness, the booking is definitively confirmed only upon receipt of 100% of the payment. Any booking should ideally be finalised five days (D-5) before the delivery date. Any allergies or dietary restrictions must be communicated at the time of this confirmation.
- Payment methods: Each invoice is issued with a Swiss QR-bill. Payment is made by bank transfer or instant transfer using this QR-bill, by TWINT, or in cash against a receipt. The order enters production only once the funds have actually been received. A PDF transfer notice does not constitute receipt of funds.
- Late payment (Ancillary invoicing): In accordance with Article 104 of the Swiss Code of Obligations, any ancillary or adjustment invoice unpaid within 10 net days of issue will automatically bear default interest of 5% per year, plus administrative handling fees set at a flat CHF 40 per reminder issued.
Article 4 – Food Safety and Transfer of Responsibility
JLM Signature Maffei guarantees production that complies with the strictest hygiene standards (one-way flow, protective packaging specific to the House) and absolute maintenance of the cold chain up to the delivery location agreed with the client.
- Transfer of risk (Art. 185 CO): Upon hand-over of the Écrin in person at delivery, the transfer of food-safety responsibility takes place instantly. The client becomes solely responsible for maintaining the cold chain. Products must be placed immediately in the refrigerator and kept there (between 2 °C and 4 °C).
- Recommendation and use-by date: To guarantee optimal organoleptic quality, it is strongly recommended to consume the Écrin within 24 hours of hand-over. The maximum use-by date guaranteed and imposed by our House is set at 48 hours, unless strictly stated otherwise (e.g. raw fish).
- Full disclaimer: JLM Signature Maffei declines all liability for any impairment of taste quality or health problem arising from failure to follow storage instructions, failure by the client to declare an allergy, defective kitchen equipment, or poor following of the Chef’s Notebook.
Article 5 – Timings, Tolerance and Receipt of the Order
- Traffic uncertainties and Tolerance: Delivery times are primarily agreed as slots. Given the unavoidable constraints of road traffic and possible customs crossings, JLM Signature Maffei expressly reserves a tolerance margin of up to one hundred and five (105) minutes beyond the originally targeted time or slot. This logistical delay beyond our control can in no case justify cancelling the order, refusing to receive the goods or any claim for financial compensation by the client.
- Client’s absence: The client undertakes to be present at the address given to receive the order. JLM Signature Maffei grants a maximum waiting time of fifteen (15) minutes at the delivery location. After this time, and if hand-over in person is impossible, the Chef will leave with the goods for imperative food-safety reasons (break in the cold chain). In this case, which is attributable to the client, the order is considered lost. No refund or redelivery will be made, and 100% of the amount remains due to the Provider.
Article 6 – Cancellation Conditions
Because of the extremely perishable nature of the produce and the bespoke sourcing undertaken by our House, Article 160 of the Swiss Code of Obligations applies. The same rules as for the Private Chef and Event Catering services apply, the reference date being the delivery date:
- Cancellation at D-15 or earlier: Sums paid are refunded in full.
- Cancellation at D-14 or later, up to the day of delivery: A cancellation indemnity equal to 50% of the total amount of the order is due; sums paid beyond this indemnity are refunded.
Article 7 – Confidentiality, Know-how and Intellectual Property
- Protected subject matter: “Écrin Know-how” means all the processes, protocols and methods of preparation, packaging, preservation and finishing of the dishes, as well as the compositions, parameters, equipment, wrappings and packaging developed by JLM Signature Maffei, together with the plating notebooks, instructions, sheets and any other document handed to the client (the “Documents”). The Écrin Know-how constitutes a manufacturing and trade secret of JLM Signature Maffei, protected in particular by Article 6 of the Swiss Unfair Competition Act (UCA) and Article 162 of the Swiss Criminal Code (SCC); it may also be protected by the Copyright Act (CopA) and be the subject of a patent application under the Patents Act (PatA).
- Handed over in confidence: By placing an order, the client acknowledges receiving the Écrin Know-how and the Documents strictly in confidence, for the sole private use of the Écrin ordered. This hand-over in no way constitutes making available to the public. No ownership right or licence is transferred to the client.
- Prohibitions: The client, and anyone present, is forbidden:
- to reproduce, photograph, film, record, digitise, describe, publish or communicate to a third party, by any means, all or part of the Documents, the finishing steps, the wrappings and packaging or their method of opening;
- to open, dismantle, analyse or have analysed the wrappings and packaging other than according to the Chef’s Notebook, and to seek to reconstruct the Écrin Know-how;
- to use the Écrin Know-how for any purpose other than tasting the Écrin ordered, in particular for commercial purposes, or to pass it on to a competitor.
- Photographs of the plates: The client and their guests are free, and even invited, to photograph and share the plated dishes and the moment of tasting, provided these images show neither the Documents, nor open wrappings or packaging, nor the finishing steps.
- Keeping the Documents: The client may keep the Documents for strictly private use. They remain the property of JLM Signature Maffei and may in no case be shared, reproduced or communicated to a third party.
- Guests: The client informs their guests of this clause; they answer for its observance by anyone present (Art. 111 CO) and are liable for any breach committed by them.
- Duration: The confidentiality obligation is unlimited in time. It ceases only if JLM Signature Maffei itself makes the information concerned public, in particular by publishing a patent.
- Penalties: For each breach, the client owes JLM Signature Maffei a contractual penalty of CHF 10,000 (Art. 160 ff. CO), due even in the absence of damage (Art. 161 para. 1 CO); payment of it does not release the client from the confidentiality obligation. JLM Signature Maffei may also claim compensation for any greater damage, demand the immediate removal of any content published, refuse any current or future order and bring any civil or criminal action, in particular under Articles 6 and 23 UCA and Article 162 SCC.
- danger to the health or safety of staff (dangerous installation, unsanitary premises, hygiene incompatible with the service);
- violence, threats, insults, discriminatory remarks, psychological or sexual harassment, non-consensual physical contact or inappropriate behaviour towards the Chef or staff, by the client, a guest or anyone present;
- aggressive behaviour linked to alcohol or other substances;
Article 9 – Force Majeure and Limitation of Liability
- Force majeure (Art. 119 CO): JLM Signature Maffei is released from its logistical obligations, and no indemnity may be claimed from it, in the event of circumstances beyond its control making delivery impossible (serious traffic accident during transport, extreme weather conditions, road blockage).
- Limitation of liability (Art. 100 CO): The Provider’s civil liability when accessing the client’s premises for delivery is strictly limited to cases of gross negligence or wilful misconduct.
Article 10 – Data Protection (nFADP)
In accordance with the Swiss Federal Act on Data Protection (nFADP), the personal information collected is strictly confidential, used exclusively for order processing, invoicing and the proper routing of deliveries, and held securely: enquiries, contact details and commercial correspondence for a maximum of three years after the last contact; invoices and accounting records for ten years, in accordance with legal obligations. The client has a right of access, rectification and deletion via contact@jlm-signature.com.

- UID number: CHE-269.112.578
- E-mail: contact@jlm-signature.com
- Phone: +41 76 274 14 72
Article 1 – Purpose
The Mystery Invitation allows a client (the “Gift-giver”) to offer third parties (the “Guests”) a Private Chef service or a L’Écrin Signature order, without revealing to them either its content or the identity of the Gift-giver before the day of the service. The General Terms and Conditions for Private chef and event catering, or those of L’Écrin Signature, apply to the service, subject to the provisions below.
Article 2 – Price and Payment
- Prices: Prices are those of the Private Chef and L’Écrin Signature in force on the date of the order, services and options included, for a service within Geneva city limits (City of Geneva and neighbouring municipalities). Beyond, the service is subject to a bespoke quotation. JLM Signature Maffei is not subject to VAT.
- Payment in full: Payment is made in full at the time of ordering, exclusively by Swiss QR-bill, generated automatically with an order number and a payment reference. Only actual receipt of payment validates the order.
- Additional costs: Any extras (overtime, added guests, special requests) are invoiced to the Gift-giver, never to the Guests.
Article 3 – Confidences Notebook and Invitation
- Confidences Notebook: Upon receipt of payment, the Gift-giver receives by e-mail the private link to their Confidences Notebook, in which they provide the Guests’ contact details, the venue, their tastes, their dietary restrictions and any information useful to the Chef. The Gift-giver guarantees they are authorised to pass on this information, in particular the Guests’ allergies and dietary requirements.
- Invitation: When the Notebook is submitted, each Guest automatically receives a digital invitation, with no mention of the Gift-giver’s identity or of the menu, inviting them to propose their availability.
- Revelation: For the Private Chef, the Gift-giver’s identity is revealed by the Chef at the table, on the day of the service. For L’Écrin Signature, it is revealed at the time of tasting, the Écrin being handed over in person.
Article 4 – Validity and Date
- Validity: The Mystery Invitation is valid for twelve (12) months from receipt of payment. It is neither refundable nor exchangeable for cash.
- Date: The date is set by mutual agreement with the Guests, according to the Chef’s availability. Once the date is set, the cancellation conditions of the general terms applicable to the service apply.
Article 5 – Data Protection (nFADP)
The information of the Gift-giver and the Guests is strictly confidential and used exclusively for organising the Mystery Invitation, preparing the meal and invoicing. It is kept for a maximum of three years after the last contact; invoices and accounting records for ten years. Everyone has a right of access, rectification and deletion via contact@jlm-signature.com.
